Classin’ up the good ole mayo

Hey hey, happy Friday! On this glorious day, I have decided that it’s the time to share my garlicky basil mayo medley/concoction/dip/combo. It uses Hampton Creek’s Just Mayo, and a few other ingredients that you almost definitely already have in the kitchen!

Have you guys tried Hampton Creek’s Just Mayo yet? It’s a godsend. I have tried other vegan mayo and they just don’t hold a nice consistency when mixed with lemon juice. (Something that I oddly seem to do with all the mayo that I use?) Plus who heard about their badass lawsuit? Hampton Creek not only won, but also influenced Hellmann’s to make their own vegan mayo because of how successful Hampton Creek’s is! I once made my dad a tofu dish with this mayo recipe as a side dip sort of thing, and he said that the tofu wouldn’t be “anything without this amazing sauce.” I think he meant it as a compliment, but saying that the tofu that I worked pretty hard on isn’t anything without this five minute mayo concoction was quite the interesting comment to make… That’s dads for ya!

In high school, my friend and I had this “would you rather” scenario where we’d ask people who hated mayo if they’d rather eat a sandwich bag full of mayo, or a sandwich bag full of jelly. When they’d say the jelly, we’d up the size of the jelly bag until the “would you rather” evolved into a giant garbage bag of jelly and a mini little ziploc of mayo. Sadly, I don’t think anyone was really entertained by this except for my friend and me…

What’s that you say? You think that’s one of the funniest things you’ve ever heard? Welcome to the very exclusive club!

So enough hype about mayo lawsuits and awful jokes, let’s get on with the recipe

For this recipe, you’ll need:

1 C Just Mayo
1/4 C fresh basil, chopped into small pieces
1 t lemon juice
1 t white wine vinegar
1/4 t pepper
1/4 t garlic powder
Dash of salt

Take all of your ingredients, mix them together in a bowl and voila! You’ve got yourself some fancy shmancy garlic and basil mayo!

This recipe goes well with pretty much anything. Cauliflower wings? Check. Crispy cornflake breaded tofu (recipe soon to come!)? Check! Thin it out with some lemon juice and use it as a dressing? CHECK!

Try this bad boy out and let me know what you think, or if it could use any additions!

By the way, for anyone who is dying to see a picture of a pooping dog today, here is your daily dose. When I was taking pictures of this mayo dip outside, I was having a lovely time enjoying the nice weather and all when my dog Sammy decided to poop veryyy close to the table I had set up. After that, my nose and I mutually decided that it was time to go inside, and the fun outside was over.

    Hello, fellow vegan. I’ve never been a fan of many animal products, including mayo. Ew. But, perhaps, the vegan kind will inspire. If i try it, I will try you brand recommendation.
